ARUN Chicken Curry (Malay Style)

Ingredients

  • ½ chicken, cleaned and cut according to preference
  • 1 coconut, ground with 3 ½ cups of water, squeezed and strained to obtain the coconut milk
  • 5 – 6 potatoes, cut according to preference
  • 1 stick cinnamon
  • 4 – 5 pcs star anise
  • 1 ½ ladle cooking oil
  • 1 large onion, sliced
  • 5 cloves garlic, sliced
  • A little ginger, sliced
  • 2 packets Arun Curry Powder or 4 tbsp curry powder
  • 1 tbsp chilli powder
  • 1 ½ pcs assam
  • 1 tsp sugar
  • 1 tbsp salt
  • 3 stalks curry leaves
  • 1 ½ cup water
Combine all ingredients, and blend into paste.

Instructions

  1. Heat oil
  2. Saute star anise, cinnamon stick, onion, ginger and garlic until fragrant.
  3. Add in the paste ingredients, always stirring until it is well-cooked.
  4. When oil separates and the spices changed colour, add in the coconut milk.
  5. Turn to medium heat. When smoking occurs and the gravy starts to boil, add in the chicken and potatoes.
  6. Stir constantly until gravy boils. Cook until the chicken and potatoes soften.
  7. Then, add in salt and seasoning powder to taste.
  8. Done and ready to serve.
